Maple Nut Muffins

2 C. all purpose flour ($.15)
1 T. baking powder ($.05)
1/2 C. brown sugar ($.10)
2 large eggs ($.15)
1 C. milk ($.10)
6 T. melted margarine, slightly cooled ($.15)
1 1/2 tsp. maple extract ($.35)
1 C. chopped walnuts or pecans ($1.25)

Preheat oven to 400.

Line 12 muffin cups with muffin cups or grease very well.

Sift together flour and baking powder. Stir in sugar. In a separate bowl, lightly beat eggs and margarine together. Mix in extract. Fold egg mixture into flour mixture, mixing until just combined. Fold nuts into the batter, careful not to overmix.

Spoon mixture evenly into 12 muffin cups.
Bake 17-20 minutes, until lightly golden brown and firm to the touch.

Yields = 12 muffins
$2.30 for 12 muffins or $.20 each

  1. Maple is my favorite flavor - this would really punch up a simple sweet muffin.
